Founded in 1882, Clément Faugier specializes in the production of candied chestnuts. This production was delicate, and many chestnuts broke. Clément Faugier had the idea to use these fragments by crushing them and mixing them with chestnuts, sugar, sugar juice and a little vanilla: the Ardèche chestnut cream was born. Since then, the recipe has never changed.
